Hello, my busy friend!

Do you feel like sometimes you are trying to do a million things at the same time and don’t get much done anyway? Sometimes I feel like a Wonder-Woman who is able to change the world for the better in no time, and sometimes it feels more like a hamster in a wheel. If you can relate, you are probably like me – always looking for the better ways to manage your household. Therefore, without too much talking, I have not one, but seven summer-perfect dishes recipes for you! Yes, you got it right! You can now have your weekly menu planned (or even all the dishes made) in advance and have at least a few items off of your busy schedule! How good is that? All of these are also vegan and some are gluten-free.

So, are you ready for these easy summer recipes?

and don’t tell me that the summer is almost over! I don’t even want to think about “back to the school” yet! We all know it is just around the corner, but we are still enjoying the hot summer days here 🙂

1.  Dimlama – stewed vegetables

I will start with my all time favourite and summer-perfect dish! Just get your favourite veggies from the garden or from whatever your source for fresh vegetables is. Cut and slice them all. Turn the heat under the pot to medium, add 2-3 tablespoons of vegetable oil, and start layering the veggies starting with onions and tomatoes going to the top. Cover the pot and let it simmer for about 15 minutes on the low/medium heat. In 15 minutes, mix the vegetables, check potatoes, and if they are ready, or almost ready, turn off the heat. Cover the pot again and let it sit for another 3-5 minutes. Enjoy!

3.  Crispy Buffalo Cauliflower

Sam is another famous author of vegan recipes and a successful blogger I admire! I have tried many of her dishes and always loved them. You will also find a lot of oriental recipes on her blog, and that is something that I resonate a lot with 🙂

4. Yellow Zucchini Sauté with Rice

My another favourite dish which helps us to utilize the harvest and especially the abundance of zucchini and pattypans 🙂

5. Spicy Noodle Stir Fry

I love noodles! Many nights when I am tired after a busy day at work, the first thing that comes to my mind when I think ‘supper’ – is noodles. Seriously, you can do them any way you want and never worry to spoil a dish. They always, like always, turn good!

6. Sesame Ginger Quinoa Salad

Don’t let the word ‘salad’ fool you! This dish is packed with protein and so filling! You can eat it hot or cold. This is just perfect for summer leftovers lunch when you have no stove or micro to heat the food!

  1. This is an awesome round up of perfect summer recipes. I absolutely love grilling veggies it’s my favorite way to have them. I need to show my mother-in-law the quinoa salad that you have your period quinoa is like her favorite thing to eat so I bet she would love this recipe. Reading all of these and looking at pictures sure as me hungry!

    1. Haha! It is highly recommended to look at the food pictures right after you had a full meal!

  2. Love the noodle stir fry, the sesame ginger ANYTHING, and grilled veggies on the BBQ. What I’m super curious to try are the Buffalo Cauliflower. That sounds amazing! Like something that even my kids would eat! And yes the emotional yo-yo is very real. I’m growing to hate cooking. Need to regroup and try some of these great new things. Thanks so much!

    1. I love anything noodle and sesame ginger as well! 🙂 I totally hear you for hating cooking. I used to be the same way. I have an excuse as my mom was a great cook, and my sister is a chef. It is hard to keep up when you have 2 awesome cooks in the family! But I am lucky to have a husband who loves cooking so for us it is always a “joint-cooking-venture”.
