We like experimenting with food and recipes. And we have a few little family traditions like making crepes on Saturdays and pancakes on Sundays. We also like to try out different types of pancakes 🙂 This time we had a box of spinach in the fridge, and I thought ‘why not add some colour to the pancakes’? Do you know where I am heading with this? Here is the secret formula I will be sharing with you only: spinach + vegan pancakes batter = St. Patrick’s Day vegan spinach pancakes!
I am so excited to share this recipe with you!
First of all, if you like pancakes, but think it takes a long time to make them, I will show you that it actually doesn’t take too long to have a delicious breakfast for the whole family.
Second, adding spinach won’t only add the colour to them. It is also a very healthy ingredient to add to your daily nutrients intake. It seriously has so many health benefits that I probably don’t even need to tell you about them to convince you 🙂
Third, if you are expecting a company or need to bring a meal to a workplace potluck, this can also be a fun option to consider.
St. Patrick’s Day Vegan Spinach Pancakes Recipe
Perfect St. Patrick's Day Vegan Pancakes
Ingredients
- 1.5 cups almond milk
- 2 tbsp apple cider vinegar
- 1 cup spinach
- 1/2 cup unbleached flour
- 1 cup whole wheet flour
- 1 ripe banana
- 1 tbsp vegan "egg" 1 tbsp of flex meal mixed with 2 tbsp of warm water
- 1/4 tsp baking soda
- 1.5 tsp baking powder
- 2 tbsp vegetable oil we use sunflower oil
- 1 diced apple
Instructions
- Make vegan buttermilk by adding apple cider vinegar to 1 cup of almond milk.While you wait for these to react, blend 1 cup of spinach with the rest of the milk. Add the spinach blend to the vegan buttermilk.
- Mash banana with a fork, and add it to the milk. Add a pinch of salt and vegan egg, and mix it all.
- Start adding flour in parts mixing the batter with a spoon or a spatula. Add baking soda, baking powder, oil, and a diced apple. Mix it all again.
- Heat the pancakes' pan well, turn the heat to medium and spoon two tablespoons of the batter into the pan to make one pancake. When you see bubbles form on your pancake, it is time to carefully flip it to the other side. It takes about 2 minutes for each side.
We don't spray the pan with oil as there is oil in the batter. This is how we like our pancakes, and this way they are also less greasy. If your pan requires some greasing with oil, or you simply like it that way better, than go ahead and do it 'your way' 🙂
How we like making and eating our vegan pancakes
We don’t use sugar when we make pancakes. The ripe banana and an apple perform as the natural sweeteners in this recipe. Also, we usually use either maple syrup or other sweet toppings (like this homemade jam). If you are not going to use any of these, and you feel like you are craving sugar, feel free to add a tablespoon of sugar.
We find them sweet enough without sugar though 😉
Also, as I have noted in the recipe, we don’t spray the pan with oil, as there is oil in the recipe. No, these vegan pancakes won’t be too dry. They are moist enough and yummy 😉
Having all these good ingredients like spinach, banana, apple, and wholewheat flour helps me reduce the guilt of having them again each weekend 🙂
What’s the St. Patrick’s Day for us
We had never celebrated the St. Patrick’s day before moving to Canada. And we had to google what it was all about the first March of our life in here 🙂 If you want to read more about the origin of the holiday you can find some information here 🙂
Though there is a religious contest to the holiday, it is now widely celebrated by so many non-religious people as well. We like celebrations and we like to have fun. So, would we say ‘No’ to another opportunity to dress-up green, party, and my husband’s favourite reason: to have a beer?
Of course not!
So, here we are. Celebrating it with you all. And also doing it in a delicious way 🙂 with these vegan spinach pancakes “wearing” green 🙂
